gâteau au yaourt or chocolate yogurt snack cakes for short!

So I had some time off before the fourth, and I knew I just HAD to bake something. But what exactly? We were having a small gathering of the usual suspects on the 3rd, but we were also leaving for vacation early the next morning, so I knew I didn’t want to make something elaborate and kitchen-destroying before we headed out of town. After much consideration and the realization that I had about 64 oz of yogurt that needed to be used immediately I settled on these, figuring that we could do a little celebration of the paris life in honor of our great allies in the revolutionary war and my upcoming trip.

These little cakes were amazing and simple–and trust me that’s rare!–so I’m sure they will be making a return appearance. They’re like brownies in cupcake form with a kick–thanks to a bit of almond extract that make them better than your average brownie.

I used a mix of bittersweet and semi-sweet chips, mostly because that was what I had lying around. It resulted in a not too bitter grown up chocolate taste that was wonderful.

In the spirit of laziness and summer vacations I took the easy way out and melted the chocolate in the microwave, instead of using the double boiler. This beautiful smooth chocolate is thanks to a little vegtable oil.
