On a lot of the internet, I’m known as the Cloudnut. I’ve touched on my love of weather here before but the season it fires up the most is during the winter. Because I sure do love some snow!
Well, this is basically has been the winter that wasn’t. It hasn’t been very cold and at our house in the city we’ve had barely any snow. I know I can’t be greedy and not every winter can be like the amazing and snow filled one we had in 2009-2010. But I feel like old man winter could through us something. Anything. Even a decent cold snap that lasts more than a day would be something at this point.
This weekend, it looked like we were finally going to have our taste of winter. All week it looked like old man winter was going to turn up, however briefly, and give us a few good inches of snow. And then yesterday, the snow slid off to our south. I was so sad! But I tried to make the best of it, taking advantage of our cloudy and cool day to do a nice long run (fastest 9 miler of my life!). But I still took the opportunity to make a nice cold weather breakfast. Baked oatmeal loaded with fruit. Delicious.
And I may be lucky with the weather after all. It looks like it might be flurrying outside now.
Blueberry and Banana Baked Oatmeal
Adapted from Skinny Taste
This is amazingly delicious. No snow required to enjoy it!
Ingredients:
2 medium ripe bananas, sliced into 1/2″ pieces
1 1/2 cup blueberries
1/4 cup honey
1 cup uncooked quick oats
1/2 tsp baking powder
3/4 tsp cinnamon
pinch of salt
1 cup fat free milk (or any milk you desire)
1 egg
1 tsp vanilla extract
Directions:
Preheat oven to 375 degrees. Arrange sliced bananas on the bottom of a greased ceramic dish. Sprinkle half of the blueberries on top of the bananas, 1/4 tsp of the cinnamon, 1 tbsp of the honey and cover with foil. Bake 15 minutes, until the bananas get soft.
Combine oats, baking powder, cinnamon, salt in a medium bowl. In another bowl, whisk together milk, remaining honey, egg, and vanilla. Add to the oat mixture. Pour over the baked bananas and blueberries. Add the remaining blueberries. Bake for 30 minutes, or until top is golden brown and the oatmeal is set. Serve hot.

Beth, this winter has been a huge disappointment for me. Now that we’re moving towards the end of February, my hopes of even a single accumulating storm are dwindling. It’s not that I love shoveling or the mess that my neighborhood becomes in the snow, but I love how quiet everything gets when the snow is coming down.
Yum! That looks delicious. And I’m perfectly happy with the mild winter we’ve had. Though it’s spoiled me- now I just want spring here now!
